So I think I experienced temptation at its peak today. At work this morning I was assigned to pull the meat off a whole tray of duck confit. 
Let me tell you how it went:
First I melted the confit that was in a hotel pan over low heat. As the duck fat melted off, the liquid started clearing up and you could begin to see the duck legs. (Fat is opaque when it is cold). As the duck warmed up, the aroma from the confit slowly crept up through my section of the kitchen. I put on some gloves, and started pulling the meat off. The meat was super moist from the melted duck fat, and each piece of meat that I pulled off, I craved to eat it. My colleague was like, “man I want to take a bath in that duckfat right now”. Haha. and omg even writing about it now is making me hungry. I literally had a foodgasm while I was pulling off the meat. And so today was really one of the best and worst tasks that I worked on; Pulling off the duck meat from the legs and separating it, while not being able to eat it was just torturous. 
At the end, I did manage to get a piece of two to taste it, and it was SO GOOD. It was definitely super fork tender and really flavorful. I think if it wasn’t for every person that eyed me and the meat while they walked by my station, I would’ve tried to sneak another bite or two.
